CREME de MENTHE BALLS

2-1/2 c. crushed vanilla wafers
1 c. sifted confectioner's sugar
2 T. unsweetened cocoa powder
1 c. finely chopped walnuts
1/3 c. Creme de Menthe
1/2 c. light/clear corn syrup
granulated sugar

Mix the dry ingredients, making sure there are no lumps. Mix the Creme de Menthe & corn syrup in a small bowl; pour over the dry ingredients, stirring until mixture is uniformly mixed and moist. Form into balls about 1 inch in diameter and roll in granulated sugar. Store in tightly covered container. These are best if made at least 3 weeks before serving; the flavors meld over time. Enjoy!
